dataset or table into a generic list?

Hi,
Is there anyway to turn a dataset or datatable into a generic list, without looping through it?  Suppose I have a class Employee with two properties, Name and Email.  And a table Employee with the same 2 columns, if I call a stored proc I get back either a dataset or datatable, but I want to return a generic list, List<Employee>, can i do that from either a dataset or datatbale, is there a method i can call? Or do i have to loop through them and create a List<Employee> object and add to it as i loop through the rows?
