how to set dropdownlist text and radioButton text ???

I have a grid view which display id, category and Edit button.when edit button is clicked gv_SelectedIndexChanging event fire, in which, i saved the selected row in a session and then redirect to a

form(which have same fields as gridview e.g Id,category etc) and retrive the values from session . Now the question is : how to set the category text in drop down list.

2nd question: how to set the radio button text if it is inside gridview
